Think about how you can function without a working kitchen. Utilize small appliances and keep your pantry stocked with nonperishable grab-and-go items. Use biodegradable plates, cups, and utensils since you won’t have a working dishwasher. Take advantage of a grill or outdoor cooking area if you have one. You may also want to consider eating out with family or friends more often. Being prepared ahead of time will greatly alleviate any stress you may have without a functioning kitchen during the remodel.
When it comes to flooring, consider slip-resistance, ease of maintenance and porosity, suggests consultant Craig Verdon. Stone floors, which are somewhat porous, for instance, may need periodic resealing. If so, ask how often, and think about whether you want to deal with that process. “Hardwood floors are beautiful, but be aware that they wear out faster by the fridge, stove and sink than other areas,” he notes. “Hard, natural stone works wonderfully, and the earthy look and feel of it is very popular.”

Home remodeling superstores carry a great selection of door hardware. Choose knobs and pulls that complement your architectural style, and don’t cut corners. This is what I call a brooch – an added touch that makes the whole room work! Also, remove and replace any old painted-over hinges with shiny new ones. It is time consuming, but very inexpensive. And it makes a huge difference.
Task Lighting: Under-cabinet lighting should be on your must-do list, since cabinets create such dark work areas. And since you’re remodeling, there won’t be a better time to hard-wire your lights. (Here’s more about under-cabinet lights.) Plan for at least two fixtures per task area to eliminate shadows. Pendant lights are good for islands and other counters without low cabinets. Recessed lights and track lights work well over sinks and general prep areas with no cabinets overhead.
Recirculating fans are little more than pricey white-noise machines. To effectively exhaust steam, smoke, odors—and, if you cook with gas, carbon monoxide—you must vent outdoors. You've also got to match the hood to the range, both in terms of dimensions (a 30-inch range needs a 30-inch hood) and of air flow, as expressed by cubic feet per minute (CFM), to firepower, or BTUs. Factor the latter using this calculation: BTU/100=CFM
